Vegetable Chilli Noodles ​​​​​​​

For the noodles:

  • 3 tbsp vegetable oil
  • 1 carrot, sliced into strips
  • 1 pepper, red or yellow or a mixture of both, sliced
  • A handful of tender stem broccoli, any large florets or stems sliced
  • 4 mushrooms, sliced
  • 400g udon noodles, or any thick, ready-cooked noodles
  • 1 tbs medium Chilli sauce

 

  • Heat a pan on a medium heat and add 1 tbsp of the oil. Add the carrot strips and fry for 1-2 minutes to soften.
  • Add the pepper, fry for 1 minute, then the mushrooms for a minute. The veg should all have softened but still have some bite.
  •  Fry the noodles for about 30 seconds before pouring in the sauce and tossing well to coat the noodles.
